Description

  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup (1 stick) unsalted butter, cold and cubed
  • 3/4 cup buttermilk, cold
  • 1/2 pound thinly sliced Virginia country ham
  • 2 tablespoons melted butter (for brushing)

Instructions

  1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. In a large bowl, whisk together flour, baking powder, baking soda, and salt.
  3. Cut in the cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
  4. Pour in the buttermilk and stir just until the dough comes together. Do not overmix.
  5. Turn dough out onto a floured surface and gently pat or roll it into a 1-inch thick rectangle.
  6. Cut into rounds using a biscuit cutter or glass and place on the prepared baking sheet.
  7. Bake for 12–15 minutes, or until golden brown. Brush tops with melted butter while still warm.
  8. Slice biscuits horizontally and fill with slices of country ham. Serve warm.
