- 1/2 cup (1 stick) unsalted butter, cold and cubed
- 3/4 cup buttermilk, cold
- 1/2 pound thinly sliced Virginia country ham
- 2 tablespoons melted butter (for brushing)
Instructions
- Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
- In a large bowl, whisk together flour, baking powder, baking soda, and salt.
- Cut in the cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
- Pour in the buttermilk and stir just until the dough comes together. Do not overmix.
- Turn dough out onto a floured surface and gently pat or roll it into a 1-inch thick rectangle.
- Cut into rounds using a biscuit cutter or glass and place on the prepared baking sheet.
- Bake for 12–15 minutes, or until golden brown. Brush tops with melted butter while still warm.
- Slice biscuits horizontally and fill with slices of country ham. Serve warm.

- Use very cold butter and buttermilk to ensure flaky biscuits.
