Description

A hearty, comforting Vegan Butter Bean Stew made with tender butter beans, fresh vegetables, and aromatic herbs in a rich tomato-based broth. Perfect for cozy dinners or meal prep.


Ingredients

  • 2 tablespoons olive oil
  • 1 medium yellow onion, diced
  • 2 medium carrots, sliced
  • 2 celery stalks, chopped
  • 3 garlic cloves, minced
  • 2 tablespoons tomato paste
  • 1 can (14.5 oz) diced tomatoes
  • 2 cups vegetable broth
  • 2 cans (15 oz each) butter beans, drained and rinsed
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Handful fresh parsley, chopped

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, carrots, and celery. Sauté for 7–8 minutes until softened.
  3. Stir in garlic and cook for 1 more minute.
  4. Add tomato paste, smoked paprika, thyme, salt, and pepper. Cook for 2 minutes.
  5. Pour in diced tomatoes and vegetable broth. Stir to combine.
  6. Add butter beans and bring to a boil.
  7. Reduce heat and simmer uncovered for 20 minutes.
  8. Stir in chopped parsley and adjust seasoning if needed.
  9. Serve hot with crusty bread or over grains.

Notes

  • Let stew rest before serving to enhance flavor.
  • For extra creaminess, blend part of the stew.
  • Store leftovers in fridge up to 4 days or freeze up to 3 months.
