- 2 tablespoons olive oil
- 1 medium yellow onion, diced
- 2 medium carrots, sliced
- 2 celery stalks, chopped
- 3 garlic cloves, minced
- 2 tablespoons tomato paste
- 1 can (14.5 oz) diced tomatoes
- 2 cups vegetable broth
- 2 cans (15 oz each) butter beans, drained and rinsed
- 1 teaspoon smoked paprika
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- Handful fresh parsley, chopped
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion, carrots, and celery. Sauté for 7–8 minutes until softened.
- Stir in garlic and cook for 1 more minute.
- Add tomato paste, smoked paprika, thyme, salt, and pepper. Cook for 2 minutes.
- Pour in diced tomatoes and vegetable broth. Stir to combine.
- Add butter beans and bring to a boil.
- Reduce heat and simmer uncovered for 20 minutes.
- Stir in chopped parsley and adjust seasoning if needed.
- Serve hot with crusty bread or over grains.
Notes
- Let stew rest before serving to enhance flavor.
- For extra creaminess, blend part of the stew.
- Store leftovers in fridge up to 4 days or freeze up to 3 months.
