Description

A vibrant and wholesome Greek-inspired power bowl loaded with juicy marinated chicken, fluffy rice, fresh vegetables, tangy feta, and a dollop of creamy tzatziki. It’s a balanced, flavor-packed meal perfect for lunch or dinner.


Ingredients

  • 1 lb (450g) boneless, skinless chicken breasts or thighs
  • 2 tbsp olive oil
  • 2 tbsp lemon juice
  • 2 garlic cloves, minced
  • 1 tsp dried oregano
  • Salt and pepper, to taste
  • 2 cups cooked white or brown rice
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/4 red onion, thinly sliced
  • 1/4 cup Kalamata olives, pitted and halved
  • 1/4 cup crumbled feta cheese
  • 1/2 cup tzatziki sauce
  • Fresh parsley or dill, chopped (for garnish)

Instructions

  1. In a bowl, combine olive oil, lemon juice, garlic, oregano, salt, and pepper. Add chicken and marinate for at least 30 minutes.
  2. Grill or pan-sear the chicken over medium-high heat for 6–8 minutes per side, or until fully cooked. Let rest, then slice.
  3. Divide cooked rice among 4 bowls.
  4. Top each bowl with sliced chicken, cherry tomatoes, cucumber, red onion, olives, and feta.
  5. Spoon tzatziki over each bowl and garnish with fresh parsley or dill.
  6. Serve immediately or refrigerate for meal prep.

Notes

  • Make it low-carb by substituting rice with cauliflower rice.
  • Add a handful of spinach or arugula for extra greens.
  • For meal prep, keep tzatziki separate until ready to eat.
