Description
Turkey Pho is a light and aromatic Vietnamese-inspired noodle soup made with turkey, fresh herbs, rice noodles, and a fragrant spiced broth. It’s a great way to use leftover turkey for a nourishing meal.

- 2 cups cooked turkey, shredded
- 8 oz rice noodles
- 6 cups turkey or chicken broth
- 1 onion, halved
- 3 slices fresh ginger
- 2 star anise
- 1 cinnamon stick
- 1 tablespoon fish sauce
- 1 teaspoon soy sauce
- 1/2 teaspoon sugar
- 1/4 teaspoon salt (or to taste)
- 1 cup bean sprouts
- 1/4 cup fresh cilantro leaves
- 1/4 cup fresh basil leaves
- 1 lime, cut into wedges
- 1 small chili, sliced (optional)
- 2 green onions, sliced
Instructions
- In a large pot, combine broth, onion, ginger, star anise, and cinnamon stick. Bring to a boil, reduce heat, and simmer for 20 minutes to infuse the flavors.
- Strain out the solids and return the broth to the pot. Add fish sauce, soy sauce, sugar, and salt. Adjust seasoning to taste.
- Meanwhile, cook rice noodles according to package instructions. Drain and set aside.
- Divide cooked noodles among bowls. Top with shredded turkey.
- Ladle the hot broth over the noodles and turkey.
- Garnish with bean sprouts, cilantro, basil, green onions, chili, and a squeeze of lime. Serve immediately.
Notes
- For extra richness, add a splash of sesame oil before serving.
- Adjust the level of heat with more or less chili or serve chili on the side.
- You can make the broth ahead and store in the fridge for up to 3 days.
