Description

Turkey Pho is a light and aromatic Vietnamese-inspired noodle soup made with turkey, fresh herbs, rice noodles, and a fragrant spiced broth. It’s a great way to use leftover turkey for a nourishing meal.


Ingredients

  • 2 cups cooked turkey, shredded
  • 8 oz rice noodles
  • 6 cups turkey or chicken broth
  • 1 onion, halved
  • 3 slices fresh ginger
  • 2 star anise
  • 1 cinnamon stick
  • 1 tablespoon fish sauce
  • 1 teaspoon soy sauce
  • 1/2 teaspoon sugar
  • 1/4 teaspoon salt (or to taste)
  • 1 cup bean sprouts
  • 1/4 cup fresh cilantro leaves
  • 1/4 cup fresh basil leaves
  • 1 lime, cut into wedges
  • 1 small chili, sliced (optional)
  • 2 green onions, sliced

Instructions

  1. In a large pot, combine broth, onion, ginger, star anise, and cinnamon stick. Bring to a boil, reduce heat, and simmer for 20 minutes to infuse the flavors.
  2. Strain out the solids and return the broth to the pot. Add fish sauce, soy sauce, sugar, and salt. Adjust seasoning to taste.
  3. Meanwhile, cook rice noodles according to package instructions. Drain and set aside.
  4. Divide cooked noodles among bowls. Top with shredded turkey.
  5. Ladle the hot broth over the noodles and turkey.
  6. Garnish with bean sprouts, cilantro, basil, green onions, chili, and a squeeze of lime. Serve immediately.

Notes

  • For extra richness, add a splash of sesame oil before serving.
  • Adjust the level of heat with more or less chili or serve chili on the side.
  • You can make the broth ahead and store in the fridge for up to 3 days.
