Turkey and Cranberry Sausage Rolls are a festive twist on a classic savory pastry. Made with ground turkey, tart cranberries, and aromatic herbs wrapped in flaky puff pastry, they’re perfect for holidays or anytime snacking.

- 1 lb ground turkey
- 1/2 cup dried cranberries, chopped
- 1/2 cup breadcrumbs
- 1 small onion, finely chopped
- 1 clove garlic, minced
- 1 tablespoon chopped fresh sage (or 1 tsp dried)
- 1 tablespoon chopped fresh parsley
- 1 egg
- Salt and pepper to taste
- 1 sheet puff pastry, thawed
- 1 egg (for egg wash)
- Sesame seeds or poppy seeds for garnish (optional)
Instructions
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a large bowl, combine ground turkey, cranberries, breadcrumbs, onion, garlic, sage, parsley, one egg, salt, and pepper. Mix until well combined.
- Roll out the puff pastry sheet on a lightly floured surface and cut in half lengthwise to make two long strips.
- Divide the turkey mixture in half and form a log of filling down the center of each strip.
- Fold the pastry over the filling and seal the edges by pressing with a fork. Place seam side down.
- Cut each log into smaller rolls (about 2 inches long) and place on the prepared baking sheet.
- Brush each roll with egg wash and sprinkle with seeds if using.
- Bake for 20–25 minutes or until golden brown and cooked through.
- Let cool slightly before serving.
Notes
- Can be made ahead and frozen before baking—bake from frozen with a few extra minutes of cooking time.
- Serve with mustard, cranberry sauce, or a dipping gravy.
- Substitute turkey with chicken or use sausage meat for a richer flavor.
