Description

Turkey and Cranberry Sausage Rolls are a festive twist on a classic savory pastry. Made with ground turkey, tart cranberries, and aromatic herbs wrapped in flaky puff pastry, they’re perfect for holidays or anytime snacking.


Ingredients

  • 1 lb ground turkey
  • 1/2 cup dried cranberries, chopped
  • 1/2 cup breadcrumbs
  • 1 small onion, finely chopped
  • 1 clove garlic, minced
  • 1 tablespoon chopped fresh sage (or 1 tsp dried)
  • 1 tablespoon chopped fresh parsley
  • 1 egg
  • Salt and pepper to taste
  • 1 sheet puff pastry, thawed
  • 1 egg (for egg wash)
  • Sesame seeds or poppy seeds for garnish (optional)

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine ground turkey, cranberries, breadcrumbs, onion, garlic, sage, parsley, one egg, salt, and pepper. Mix until well combined.
  3. Roll out the puff pastry sheet on a lightly floured surface and cut in half lengthwise to make two long strips.
  4. Divide the turkey mixture in half and form a log of filling down the center of each strip.
  5. Fold the pastry over the filling and seal the edges by pressing with a fork. Place seam side down.
  6. Cut each log into smaller rolls (about 2 inches long) and place on the prepared baking sheet.
  7. Brush each roll with egg wash and sprinkle with seeds if using.
  8. Bake for 20–25 minutes or until golden brown and cooked through.
  9. Let cool slightly before serving.

Notes

  • Can be made ahead and frozen before baking—bake from frozen with a few extra minutes of cooking time.
  • Serve with mustard, cranberry sauce, or a dipping gravy.
  • Substitute turkey with chicken or use sausage meat for a richer flavor.
