- 2 large square pieces of sun-dried tomato focaccia, halved horizontally
- 4 to 6 oz sliced turkey
- 2 tbsp mayonnaise
- 3 to 4 thin slices of red onion
- 1/2 cup mixed greens
- 2 to 3 sun-dried tomatoes, sliced
- 2 tbsp grated parmesan cheese
Instructions
- Preheat oven or toaster oven to 375°F.
- While preheating, slice onions thin, prepare greens, and grate parmesan if needed.
- Place focaccia halves on a baking sheet, cut side up. Toast for 3–5 minutes.
- Spread mayonnaise on both sides of the toasted bread.
- Layer turkey, sun-dried tomatoes, red onions, and mixed greens.
- Sprinkle parmesan cheese on top and close the sandwich.
- Optional: Warm the sandwich in the oven for another 3–5 minutes.
- Remove, let rest briefly, then slice and serve.

- Toast bread lightly to enhance flavor and texture.
- Soak sun-dried tomatoes in warm water if too chewy.
- Warm turkey slices slightly for extra comfort.
