- 1 (10.5 oz) can condensed cream of mushroom soup
- 1 (10.5 oz) can French onion soup (or beef consommé)
- 1/2 cup sour cream
- 12 oz egg noodles
- 2 cups beef broth or water
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- If using stew meat, heat olive oil in a large skillet or Dutch oven over medium-high heat. Brown the beef on all sides. If using ground beef, cook until fully browned. Drain excess fat if needed.
- Add the French onion soup mix, cream of mushroom soup, French onion soup, and beef broth to the skillet. Stir well to combine.
- Bring to a simmer, reduce heat, cover, and cook for 20–25 minutes until beef is tender (longer for stew meat).
- Meanwhile, cook egg noodles according to package instructions. Drain and set aside.
- Once the beef is tender, stir in sour cream and cooked noodles. Mix until well combined and heated through.
- Season with salt and pepper to taste. Garnish with parsley if desired, and serve hot.
