Description
Texas Hash is a hearty one-pan meal made with ground beef, rice, tomatoes, and bell peppers, seasoned with Southwestern spices. It’s a quick and comforting dish that’s perfect for busy weeknights.
Ingredients
Scale
- 1 pound ground beef
- 1 medium onion, chopped
- 1 green bell pepper, chopped
- 1 cup uncooked white rice
- 1 can (14.5 oz) diced tomatoes, undrained
- 1 cup beef broth or water
- 1 tablespoon chili powder
- 1/2 teaspoon cumin
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- 1 tablespoon olive oil
- Optional: shredded cheese and chopped parsley for topping
Instructions
- Heat olive oil in a large skillet over medium heat. Add ground beef and cook until browned, breaking it up as it cooks. Drain excess fat.
- Add chopped onion and green bell pepper to the skillet. Cook for 4–5 minutes until softened.
- Stir in the uncooked rice, diced tomatoes (with juice), beef broth, chili powder, cumin, garlic powder, salt, and pepper.
- Bring the mixture to a boil, then reduce heat to low, cover, and simmer for about 20–25 minutes, or until the rice is tender and the liquid is absorbed.
- Remove from heat and let sit for 5 minutes. Fluff with a fork.
- Top with shredded cheese and chopped parsley if desired. Serve hot.
Notes
- Use brown rice for added fiber, but increase cook time accordingly.
- For a spicier version, add diced jalapeños or a pinch of cayenne pepper.
- Leftovers store well in the fridge for up to 3 days and make a great lunch.
- This dish can also be made in a Dutch oven or oven-safe pan.
