Description

These tamari roasted nuts are a savory, crunchy, and slightly sweet snack that’s packed with umami flavor. Made with a blend of almonds, cashews, walnuts, and pecans, they’re coated in a tamari-maple glaze with a hint of smoked paprika and garlic powder—perfect for snacking or gifting.

Ingredients

Scale
  • 1 cup raw almonds
  • 1 cup raw cashews
  • 1 cup raw walnuts
  • 1 cup raw pecans
  • 1/4 cup tamari sauce
  • 2 tablespoons maple syrup
  • 1 tablespoon olive oil
  • 1 tablespoon sesame seeds
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder

Instructions

  1. Preheat your oven to 325°F (160°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, whisk together tamari sauce, maple syrup, olive oil, smoked paprika, and garlic powder until well combined.
  3. Add all the raw nuts and sesame seeds to the bowl and toss until fully coated.
  4. Spread the nut mixture evenly in a single layer on the prepared baking sheet.
  5. Bake for 15 minutes, stirring once halfway through to ensure even roasting.
  6. Remove from oven and let cool completely on the pan. The nuts will crisp up as they cool.
  7. Once cooled, transfer to a serving bowl or airtight container for storage.

Notes

  • Use raw, unsalted nuts for best results.
  • Let the nuts cool fully before storing to maintain crispness.
  • Add cayenne for a spicy twist or nutritional yeast for extra umami.
  • These make great homemade gifts when packed in jars.
