- 1 lb ground beef
- 1 tablespoon olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 packet taco seasoning (or homemade)
- 1 can (10 oz) diced tomatoes with green chilies (Rotel-style)
- 2 cups beef broth
- 8 oz spaghetti, broken in half
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- Fresh cilantro and sliced jalapeños for garnish (optional)
Instructions
- Heat olive oil in a large skillet or pot over medium heat. Add ground beef and cook until browned, breaking it up as it cooks. Drain excess fat if needed.
- Add diced onion and garlic. Sauté for 2–3 minutes until softened.
- Stir in taco seasoning, diced tomatoes with green chilies, and beef broth. Bring to a simmer.
- Add broken spaghetti, stirring to submerge it in the liquid.
- Cover and cook for 12–15 minutes, stirring occasionally, until the pasta is tender and most of the liquid is absorbed.
- Stir in shredded cheddar cheese and sour cream until melted and creamy.
- Top with cilantro and jalapeños if desired. Serve hot.
Notes
- Swap ground beef with ground turkey or chicken for a leaner version.
- Use Mexican blend cheese for extra flavor.
- Great topped with crushed tortilla chips or avocado slices.
