Description

Taco Spaghetti is a bold and flavorful fusion dish that combines the zesty essence of tacos with the comforting texture of spaghetti. It’s an easy one-pot meal that’s perfect for busy weeknights and sure to satisfy the whole family.


Ingredients

  • 1 lb ground beef
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 packet taco seasoning (or homemade)
  • 1 can (10 oz) diced tomatoes with green chilies (Rotel-style)
  • 2 cups beef broth
  • 8 oz spaghetti, broken in half
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • Fresh cilantro and sliced jalapeños for garnish (optional)

Instructions

  1. Heat olive oil in a large skillet or pot over medium heat. Add ground beef and cook until browned, breaking it up as it cooks. Drain excess fat if needed.
  2. Add diced onion and garlic. Sauté for 2–3 minutes until softened.
  3. Stir in taco seasoning, diced tomatoes with green chilies, and beef broth. Bring to a simmer.
  4. Add broken spaghetti, stirring to submerge it in the liquid.
  5. Cover and cook for 12–15 minutes, stirring occasionally, until the pasta is tender and most of the liquid is absorbed.
  6. Stir in shredded cheddar cheese and sour cream until melted and creamy.
  7. Top with cilantro and jalapeños if desired. Serve hot.

Notes

  • Swap ground beef with ground turkey or chicken for a leaner version.
  • Use Mexican blend cheese for extra flavor.
  • Great topped with crushed tortilla chips or avocado slices.
