Description

Tender sweet chili chicken, fluffy jasmine rice, and crisp fresh vegetables are wrapped in soft tortillas for an easy, satisfying meal that works beautifully for lunch or dinner.


Ingredients

  • 1 pound boneless skinless chicken thighs, cooked and sliced thin
  • 2 cups cooked jasmine rice, warm or room temperature
  • 4 large flour tortillas
  • 1/2 cup sweet chili sauce
  • 1 tablespoon low-sodium soy sauce
  • 1 tablespoon fresh lime juice
  • 1 teaspoon sesame oil
  • 2 cups shredded romaine lettuce
  • 1 cup matchstick carrots
  • 1 cup cucumber, cut into thin strips
  • 2 green onions, thinly sliced
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Heat a large skillet over medium heat.
  2. In a mixing bowl, toss the cooked sliced chicken with the sweet chili sauce, soy sauce, lime juice, sesame oil, black pepper, and salt until evenly coated.
  3. Add the sauced chicken to the skillet and cook for 3 to 4 minutes, stirring gently, until heated through. Warm the rice separately if needed.
  4. Warm the tortillas briefly until flexible.
  5. Lay each tortilla flat and add shredded romaine lettuce, cooked jasmine rice, warm sweet chili chicken, matchstick carrots, cucumber strips, and sliced green onions.
  6. Fold in the sides and roll tightly into wraps.
  7. Place the wraps seam-side down in the skillet for 1 to 2 minutes per side if desired, until lightly toasted.
  8. Rest for 1 minute, slice in half, and serve right away.

Notes

  • Pat the cucumber dry before assembling to help prevent soggy wraps.
  • Do not overfill the tortillas or they will be harder to roll tightly.
  • For meal prep, store the chicken, rice, and vegetables separately and assemble just before serving.
  • Serve with extra sweet chili sauce on the side for added flavor.
