  • 2 cups cooked jasmine or basmati rice
  • 1 cup shredded cabbage or mixed greens
  • 1 cup sliced cucumber
  • 1/2 cup shredded carrots
  • 1/4 cup chopped fresh cilantro
  • For the Coconut Lime Drizzle:
    • 1/2 cup canned coconut milk
    • 1 tablespoon lime juice
    • 1 teaspoon honey or maple syrup
    • Pinch of salt
  • Optional garnish: sliced green onions, sesame seeds, lime wedges

Instructions

  1. In a bowl, combine the chicken pieces with sweet chili sauce and soy sauce; marinate for 10-15 minutes.
  2. Heat vegetable oil in a skillet over medium-high heat. Add chicken and cook until browned and cooked through, about 6-8 minutes.
  3. In a small bowl, whisk together coconut milk, lime juice, honey, and salt to make the coconut lime drizzle.
  4. Assemble the bowls by dividing cooked rice among serving bowls.
  5. Top rice with cooked chicken, shredded cabbage, cucumber slices, carrots, and fresh cilantro.
