- 1 whole beef tenderloin roast (4–5 lbs), trimmed
- 2 tbsp olive oil
- Salt and black pepper, to taste
- 1/2 cup unsalted butter, softened
- 4 cloves garlic, minced
- 2 tbsp fresh rosemary, chopped
- 2 tbsp fresh thyme, chopped
- 1 tbsp Dijon mustard
Instructions
- Preheat oven to 425°F (220°C). Place a rack in a roasting pan.
- Pat the beef tenderloin dry and rub it all over with olive oil, salt, and pepper.
- In a small bowl, mix the softened butter, garlic, rosemary, thyme, and Dijon mustard until well combined.
- Spread the herb butter evenly over the entire surface of the beef.
- Place the roast on the rack in the roasting pan and insert a meat thermometer into the thickest part.
- Roast for 40-50 minutes or until internal temperature reaches 125°F (52°C) for medium-rare, or desired doneness.
- Remove from oven, cover loosely with foil, and let rest for 15-20 minutes before slicing.
Notes
- For extra flavor, sear the tenderloin in a hot skillet before roasting.
- Use leftover pan juices to make a simple red wine or beef stock reduction.
- This roast pairs perfectly with roasted potatoes or a green salad.
