Description

Succulent Herb Butter Beef Tenderloin Roast is a tender, melt-in-your-mouth roast infused with garlic and fresh herb butter, then roasted to perfection. A show-stopping centerpiece for holidays or special occasions.


Ingredients

  • 1 whole beef tenderloin roast (45 lbs), trimmed
  • 2 tbsp olive oil
  • Salt and black pepper, to taste
  • 1/2 cup unsalted butter, softened
  • 4 cloves garlic, minced
  • 2 tbsp fresh rosemary, chopped
  • 2 tbsp fresh thyme, chopped
  • 1 tbsp Dijon mustard

Instructions

  1. Preheat oven to 425°F (220°C). Place a rack in a roasting pan.
  2. Pat the beef tenderloin dry and rub it all over with olive oil, salt, and pepper.
  3. In a small bowl, mix the softened butter, garlic, rosemary, thyme, and Dijon mustard until well combined.
  4. Spread the herb butter evenly over the entire surface of the beef.
  5. Place the roast on the rack in the roasting pan and insert a meat thermometer into the thickest part.
  6. Roast for 40-50 minutes or until internal temperature reaches 125°F (52°C) for medium-rare, or desired doneness.
  7. Remove from oven, cover loosely with foil, and let rest for 15-20 minutes before slicing.

Notes

  • For extra flavor, sear the tenderloin in a hot skillet before roasting.
  • Use leftover pan juices to make a simple red wine or beef stock reduction.
  • This roast pairs perfectly with roasted potatoes or a green salad.
