Description

Ingredients

  • 4 salmon fillets (about 150 grams each)
  • 2 cups fresh spinach, chopped
  • 150 grams cream cheese, softened
  • 2 garlic cloves, minced
  • 1 lemon (zested and juiced)
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat your oven to 180°C.
  2. In a mixing bowl, combine cream cheese, chopped spinach, minced garlic, lemon zest, salt, and black pepper until smooth.
  3. Lightly grease a baking dish with olive oil.
  4. Lay the salmon fillets flat and spread the filling evenly over each piece.
  5. Roll each fillet tightly into a pinwheel shape.
  6. Place the rolls in the baking dish and drizzle with olive oil.
  7. Bake for 20 minutes until the salmon is cooked through and flakes easily.
