Description

Strawberry Snack Cake is a light, moist, and buttery single-layer treat filled with strawberries. It’s perfect for a simple dessert, a sweet snack, or a lovely addition to a weekend brunch.


Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, room temperature
  • 2/3 cup sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup buttermilk
  • 1 cup strawberries, diced
  • 1 tablespoon coarse sugar (optional, for topping)

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9-inch round cake pan.
  2. In a bowl, whisk together flour, baking powder, baking soda, and salt.
  3. In another bowl, cream together butter and sugar until light and fluffy. Add the egg and vanilla and blend well.
  4. Add flour mixture alternately with buttermilk, starting and ending with flour. Fold in strawberries.
  5. Pour batter into prepared pan, smooth the top, and sprinkle coarse sugar on if you like.
  6. Bake for 30-35 minutes or until a toothpick inserted in center comes out clean. Let cool in the pan for 10 minutes, then transfer to a wire rack.

Notes

  • For a twist, add lemon zest or orange zest to batter.
  • Frozen strawberries can be used if fresh are unavailable — just fold in directly from freezing.
  • Pair with whipped cream or vanilla ice cream for a lovely dessert.
