Strawberry Snack Cake is a light, moist, and buttery single-layer treat filled with strawberries. It’s perfect for a simple dessert, a sweet snack, or a lovely addition to a weekend brunch.

- 1 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, room temperature
- 2/3 cup sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 cup buttermilk
- 1 cup strawberries, diced
- 1 tablespoon coarse sugar (optional, for topping)
Instructions
- Preheat oven to 350°F (175°C) and grease a 9-inch round cake pan.
- In a bowl, whisk together flour, baking powder, baking soda, and salt.
- In another bowl, cream together butter and sugar until light and fluffy. Add the egg and vanilla and blend well.
- Add flour mixture alternately with buttermilk, starting and ending with flour. Fold in strawberries.
- Pour batter into prepared pan, smooth the top, and sprinkle coarse sugar on if you like.
- Bake for 30-35 minutes or until a toothpick inserted in center comes out clean. Let cool in the pan for 10 minutes, then transfer to a wire rack.
Notes
- For a twist, add lemon zest or orange zest to batter.
- Frozen strawberries can be used if fresh are unavailable — just fold in directly from freezing.
- Pair with whipped cream or vanilla ice cream for a lovely dessert.
