Description

A fun and sweet treat that combines the flavors of a classic strawberry pop tart in the form of soft, chewy cookies, filled with strawberry jam and topped with a sugary glaze.

  • 1 large egg

  • 1/2 cup powdered sugar
  • 2 teaspoons milk

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream together butter and sugar until light and fluffy. Add the egg and vanilla extract, and mix until combined.
  3. In another bowl, whisk together flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  4. Roll dough into small balls (about 1 tablespoon each) and flatten them slightly. Place a small spoonful of strawberry jam in the center of each cookie.
  5. Top with another dough ball and press the edges to seal. Use a fork to crimp the edges, ensuring the jam stays inside.
  6. Bake for 10-12 minutes, until golden around the edges. Let cool on a wire rack.
  7. For the glaze, mix powdered sugar and milk until smooth. Drizzle over the cooled cookies and top with sprinkles if desired.
