Description

Strawberry Crunch Cheesecake Bites are a delightful handheld dessert featuring a creamy cheesecake center, a golden vanilla cookie crust, and a sweet strawberry crunch topping. These no-bake treats are perfect for parties, quick snacks, or whenever you’re craving a fruity, creamy indulgence.

Ingredients

Scale
  • 8 golden sandwich cookies (like Golden Oreos), crushed
  • 2 tablespoons unsalted butter, melted
  • 8 oz cream cheese, softened
  • 1/4 cup powdered sugar
  • 1/4 teaspoon vanilla extract
  • 1/4 cup whipped topping (like Cool Whip)
  • 1/4 cup freeze-dried strawberries, crushed
  • 1/4 cup crushed golden sandwich cookies (for topping)
  • Optional: Fresh strawberries for garnish

Instructions

  1. In a small bowl, mix crushed cookies with melted butter until combined. Press about a tablespoon of the mixture into the bottom of each silicone mold or mini muffin liner to form a crust. Chill in the freezer for 10 minutes.
  2. In a mixing bowl, beat cream cheese, powdered sugar, and vanilla extract until smooth and creamy. Fold in whipped topping until well incorporated.
  3. Spoon or pipe the cheesecake filling onto the chilled crusts, smoothing the tops.
  4. In a separate bowl, combine crushed freeze-dried strawberries and crushed cookies to make the strawberry crunch topping.
  5. Sprinkle the strawberry crunch topping generously over the cheesecake bites.
  6. Chill in the refrigerator for at least 2 hours to set. Garnish with fresh strawberry slices if desired before serving.

Notes

  • Use a silicone mold for easy removal of bites without crumbling.
  • You can swap freeze-dried strawberries with strawberry gelatin mix for extra sweetness and color.
  • These bites freeze well for up to a month—just thaw slightly before serving.
