- 24 golden sandwich cookies, crushed and divided
- 3 tablespoons strawberry gelatin powder
- 8 ounces cream cheese, softened
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 2 tablespoons unsalted butter, melted
Instructions
- Line a baking sheet with parchment paper and set aside.
- In a large mixing bowl, beat the softened cream cheese, powdered sugar, and vanilla extract until smooth and fluffy.
- Gently fold in the finely chopped strawberries and 1 cup of the crushed golden sandwich cookies until evenly combined.
- In a separate bowl, mix the remaining crushed cookies with the strawberry gelatin powder and melted butter until well coated.
- Scoop tablespoon-sized portions of the cream cheese mixture and roll into smooth balls.
- Roll each ball in the strawberry cookie mixture until fully coated.
- Place the coated bites onto the prepared baking sheet and refrigerate for at least 1 hour, or until firm.
- Serve chilled and enjoy.
Notes
- Chill the mixture for 15 to 20 minutes before rolling if it feels too soft.
