Description
Strawberry Cheesecake Chimichangas are a decadent dessert featuring a creamy cheesecake filling and fresh strawberries wrapped in a tortilla, fried to golden perfection, and coated in cinnamon sugar. Crispy on the outside and lusciously creamy on the inside!
Ingredients
Scale
- 8 oz cream cheese, softened
- 1/4 cup granulated sugar
- 1/2 tsp vanilla extract
- 1/2 cup chopped fresh strawberries
- 4 large flour tortillas
- Oil for frying (vegetable or canola)
- 1/2 cup granulated sugar (for coating)
- 1 tsp ground cinnamon (for coating)
Instructions
- In a bowl, beat together cream cheese, 1/4 cup sugar, and vanilla extract until smooth.
- Gently fold in the chopped strawberries.
- Divide the mixture evenly between the tortillas, placing it in the center of each.
- Fold in the sides and roll up the tortillas tightly like burritos to seal the filling inside.
- In a deep skillet or frying pan, heat oil over medium heat.
- Fry the chimichangas seam-side down first until golden brown on all sides, about 2–3 minutes per side.
- Remove from oil and drain on paper towels.
- In a shallow dish, mix 1/2 cup sugar with cinnamon. Roll warm chimichangas in the cinnamon sugar to coat.
- Serve warm as-is or with whipped cream or chocolate drizzle.
Notes
- For extra indulgence, drizzle with chocolate or caramel sauce before serving.
- You can bake the chimichangas at 400°F (200°C) for 15–20 minutes as a healthier option.
- Use other berries or fruit preserves if strawberries are not available.
