Description

Strawberry Cheesecake Chimichangas are a decadent dessert featuring a creamy cheesecake filling and fresh strawberries wrapped in a tortilla, fried to golden perfection, and coated in cinnamon sugar. Crispy on the outside and lusciously creamy on the inside!


Ingredients

  • 8 oz cream cheese, softened
  • 1/4 cup granulated sugar
  • 1/2 tsp vanilla extract
  • 1/2 cup chopped fresh strawberries
  • 4 large flour tortillas
  • Oil for frying (vegetable or canola)
  • 1/2 cup granulated sugar (for coating)
  • 1 tsp ground cinnamon (for coating)

Instructions

  1. In a bowl, beat together cream cheese, 1/4 cup sugar, and vanilla extract until smooth.
  2. Gently fold in the chopped strawberries.
  3. Divide the mixture evenly between the tortillas, placing it in the center of each.
  4. Fold in the sides and roll up the tortillas tightly like burritos to seal the filling inside.
  5. In a deep skillet or frying pan, heat oil over medium heat.
  6. Fry the chimichangas seam-side down first until golden brown on all sides, about 2–3 minutes per side.
  7. Remove from oil and drain on paper towels.
  8. In a shallow dish, mix 1/2 cup sugar with cinnamon. Roll warm chimichangas in the cinnamon sugar to coat.
  9. Serve warm as-is or with whipped cream or chocolate drizzle.

Notes

  • For extra indulgence, drizzle with chocolate or caramel sauce before serving.
  • You can bake the chimichangas at 400°F (200°C) for 15–20 minutes as a healthier option.
  • Use other berries or fruit preserves if strawberries are not available.
