Description

A light and fluffy Strawberry Blueberry Cake bursting with fresh berries and topped with a sweet glaze, perfect for summer gatherings or as a delicious dessert any time of the year.


Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup sour cream or Greek yogurt
  • 1/4 cup milk
  • 1 cup fresh strawberries, chopped
  • 1 cup fresh blueberries
  • 1 tbsp flour (to toss berries)
  • Glaze: 1/2 cup powdered sugar, 2 tbsp lemon juice

Instructions

  1. Preheat the oven to 350°F (175°C) and grease or line a 9-inch round cake pan with parchment paper.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
  3. In a large mixing bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time, then add vanilla extract.
  4. Mix in the sour cream and milk until smooth.
  5. Gradually add the dry ingredients to the wet mixture and mix until just combined.
  6. Toss the chopped strawberries and blueberries in 1 tablespoon of flour to prevent sinking. Gently fold the berries into the batter.
  7. Pour the batter into the prepared cake pan and spread evenly.
  8. Bake for 35-40 minutes or until a toothpick inserted into the center comes out clean. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  9. Whisk together the powdered sugar and lemon juice to make the glaze. Drizzle over the cooled cake before serving.

Notes

  • You can substitute frozen berries, but thaw and drain them well before using.
  • For extra flavor, add lemon zest to the batter.
  • Store leftover cake in an airtight container at room temperature for up to 2 days or in the refrigerator for up to 4 days.
