These Strawberry and Cinnamon French Toast Roll-Ups are a quick and delightful twist on classic French toast, filled with cream cheese and fresh strawberries, then rolled in sweet cinnamon sugar.

- 8 slices white sandwich bread
- 4 oz cream cheese, softened
- 1 cup fresh strawberries, finely diced
- 2 tbsp granulated sugar
- 1 tsp ground cinnamon
- 2 large eggs
- 1/4 cup milk
- 2 tbsp butter
- 1 tsp vanilla extract
Instructions
- Preheat a nonstick skillet or griddle over medium-low heat.
- In a bowl, mix the sugar and cinnamon. In a separate bowl, whisk together eggs, milk, and vanilla extract.
- Trim crusts off bread slices and flatten them with a rolling pin.
- Spread cream cheese on each slice, top with strawberries, and roll tightly.
- Dip each roll into the egg mixture, coating all sides.
- Add butter to the skillet, and place roll-ups seam-side down. Cook, turning occasionally, until golden brown on all sides.
- While warm, roll each in cinnamon sugar until coated.
- Serve immediately with syrup or extra strawberries if desired.
Notes
- Use day-old bread for best results.
- Don’t overfill to avoid leaks during cooking.
- Let roll-ups rest for a minute before serving to firm up slightly.
