- 1 pound ground chicken
- 1/2 cup breadcrumbs
- 1 egg
- 2 cloves garlic, minced
- 1/4 cup green onions, finely chopped
- Salt and pepper, to taste
- 1 cup barbecue sauce, divided
- 1 tablespoon olive oil
- For the broccoli slaw: 3 cups broccoli slaw mix
- 1/4 cup mayonnaise
- 1 tablespoon apple cider vinegar
- 1 tablespoon honey
- Salt and pepper, to taste
Instructions
- Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a large bowl, combine ground chicken, breadcrumbs, egg, minced garlic, green onions, salt, and pepper. Mix until just combined.
- Form the mixture into 1 1/2-inch meatballs and place them on the prepared baking sheet.
- Bake for 15–18 minutes, or until the meatballs are cooked through.
- While the meatballs bake, prepare the broccoli slaw. In a large bowl, whisk together mayonnaise, apple cider vinegar, honey, salt, and pepper. Add the broccoli slaw mix and toss until coated. Set aside.
- In a large skillet over medium heat, add olive oil and 3/4 cup of the barbecue sauce. Add the baked meatballs and gently toss to coat them in the sauce. Let simmer for 3–5 minutes until sticky and glazed.
- Serve the sticky BBQ chicken meatballs with the broccoli slaw on the side. Drizzle with additional barbecue sauce if desired.
