Description

Sticky BBQ Chicken Meatballs with Broccoli Slaw is a flavorful and easy meal featuring juicy chicken meatballs glazed in a sweet and tangy barbecue sauce, paired with a crisp, refreshing broccoli slaw for a balanced and delicious dish.


Ingredients

  • 1 pound ground chicken
  • 1/2 cup breadcrumbs
  • 1 egg
  • 2 cloves garlic, minced
  • 1/4 cup green onions, finely chopped
  • Salt and pepper, to taste
  • 1 cup barbecue sauce, divided
  • 1 tablespoon olive oil
  • For the broccoli slaw: 3 cups broccoli slaw mix
  • 1/4 cup mayonnaise
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon honey
  • Salt and pepper, to taste

Instructions

  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large bowl, combine ground chicken, breadcrumbs, egg, minced garlic, green onions, salt, and pepper. Mix until just combined.
  3. Form the mixture into 1 1/2-inch meatballs and place them on the prepared baking sheet.
  4. Bake for 15–18 minutes, or until the meatballs are cooked through.
  5. While the meatballs bake, prepare the broccoli slaw. In a large bowl, whisk together mayonnaise, apple cider vinegar, honey, salt, and pepper. Add the broccoli slaw mix and toss until coated. Set aside.
  6. In a large skillet over medium heat, add olive oil and 3/4 cup of the barbecue sauce. Add the baked meatballs and gently toss to coat them in the sauce. Let simmer for 3–5 minutes until sticky and glazed.
  7. Serve the sticky BBQ chicken meatballs with the broccoli slaw on the side. Drizzle with additional barbecue sauce if desired.

Notes

  • Use your favorite barbecue sauce—sweet, smoky, or spicy—for different flavor profiles.
  • You can substitute ground turkey for ground chicken if preferred.
  • For a lighter option, use Greek yogurt instead of mayonnaise in the slaw.
