- 300g sirloin steak
- 1 large red onion, thinly sliced
- 2 tablespoons olive oil
- 1.5 cups oven chips (frozen or leftover roasted potatoes)
- 1 cup arugula (rocket)
- 1/4 cup shaved parmesan
- 1 garlic clove, minced

Instructions

- In a skillet, heat 1 tablespoon olive oil and cook red onions with a pinch of salt for 10 minutes until caramelized. Set aside.
- Season steak with salt and pepper, sear for 3 minutes per side, then rest for 5 minutes. Slice thinly against the grain.
- Brush flatbreads with olive oil and rub with garlic. Layer with chips, onions, and sliced steak.
- Bake on hot sheet pan for 8–10 minutes until edges are crispy and chips are golden.
- Remove from oven and top with arugula, shaved parmesan, and a drizzle of warm jus.

Notes
- Let steak rest before slicing to keep it juicy.
- Use pre-cooked chips to save time.
- Drizzle jus lightly to avoid soggy flatbreads.
- Reheat in toaster oven for best results.
