- 2 (6-ounce) salmon fillets, skinless
- 6 small flour tortillas
- 1 cup shredded lettuce
- 1 cup finely sliced red cabbage
- 1/3 cup Caesar dressing
- 1 tablespoon lemon juice
- 1/2 teaspoon black pepper
- 2 tablespoons chopped fresh cilantro
- 1 tablespoon olive oil
Instructions
- Heat a non-stick skillet or grill pan over medium heat. Add olive oil and let it warm up.
- In a bowl, mix shredded lettuce, red cabbage, Caesar dressing, lemon juice, and black pepper. Toss well and set aside to chill.
- Place the salmon fillets in the hot pan, seasoning lightly with salt and pepper. Cook 3 to 4 minutes per side or until just cooked through. Flake gently with a fork.
- Warm your tortillas in a skillet or microwave. Lay out each tortilla, add a scoop of Caesar slaw, top with flaked salmon, and sprinkle with fresh cilantro.
- Drizzle a little extra Caesar dressing if desired and add a squeeze of lemon over the top.
- Serve immediately while the tortillas are warm and the slaw still crisp.
Notes
- Keep tortillas wrapped in foil after warming to prevent drying out.
- Use a mandoline slicer for super fine cabbage shreds.
- Let the salmon rest a few minutes after cooking to retain juices.
