Description

This hearty Steak & Guinness Pie features tender chunks of beef, aromatic vegetables, and a rich gravy tucked beneath a golden puff pastry crust. A true comfort food classic, perfect for cozy evenings and family dinners.


Ingredients

  • 1.5 pounds diced beef (chuck or stewing beef)
  • 1 large yellow onion, chopped
  • 2 medium carrots, diced
  • 2 celery stalks, diced
  • 3 garlic cloves, minced
  • 2 tablespoons tomato paste
  • 2 cups beef broth
  • 2 tablespoons all-purpose flour
  • 1 teaspoon fresh thyme leaves
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 sheet puff pastry, thawed
  • 1 egg, beaten (for egg wash)

Instructions

  1. Preheat oven to 400°F (200°C) and lightly grease a pie dish.
  2. In a Dutch oven, heat olive oil and sear beef until browned. Remove and set aside.
  3. Sauté onions, carrots, and celery until soft. Stir in garlic and tomato paste, cook for 1 minute.
  4. Add flour and cook for another minute. Pour in beef broth, return beef to pot, and add thyme, salt, and pepper.
  5. Simmer for 1.5 hours until beef is tender and sauce thickens. Let the filling cool.
  6. Pour cooled filling into pie dish. Top with puff pastry, seal edges, cut steam vents, and brush with egg wash.
  7. Bake for 30–35 minutes until crust is golden. Let rest for 5–10 minutes before serving.
