Steak & Cheese Quesadillas are a hearty, cheesy, and flavor-packed meal featuring tender slices of seasoned steak, gooey melted cheese, and crispy golden tortillas. They’re quick to prepare and perfect for lunch, dinner, or even game day snacks.

- 1 lb flank steak or sirloin, thinly sliced
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon smoked paprika
- Salt and black pepper to taste
- 1/2 cup diced onion (optional)
- 1/2 cup diced bell peppers (optional)
- 1 1/2 cups shredded cheese (cheddar, Monterey Jack, or a mix)
- 4 large flour tortillas
- Butter or oil for the skillet
Instructions
- Heat olive oil in a skillet over medium-high heat. Add sliced steak, garlic powder, onion powder, paprika, salt, and pepper. Cook until steak is browned and cooked through, about 5–7 minutes.
- Optional: Add diced onions and bell peppers to the skillet and sauté for 3–4 minutes until softened. Remove mixture from skillet and set aside.
- Wipe the skillet clean and heat over medium heat. Lightly butter one side of a tortilla and place it butter-side down in the skillet.
- On one half of the tortilla, layer steak mixture and shredded cheese. Fold the tortilla over to create a half-moon shape.
- Cook for 2–3 minutes per side or until the tortilla is golden and the cheese is melted. Repeat with remaining tortillas and filling.
- Slice quesadillas into wedges and serve with salsa, sour cream, or guacamole.
Notes
- Use pre-cooked steak for an even faster prep time.
- Add jalapeños or hot sauce for a spicy kick.
- Swap steak for chicken or mushrooms for a variation.
