- 6 ounces rice noodles
- 3 cups chopped romaine lettuce
- 1 cup julienned carrots
- 1 cup sliced cucumber
- 1 cup shredded red cabbage
- 1/2 cup fresh cilantro, loosely packed
- 1/2 cup fresh mint, loosely packed
- 1/3 cup roasted peanuts
- 1/3 cup creamy peanut butter
- 3 tablespoons soy sauce
- 3 tablespoons fresh lime juice
- 2 tablespoons honey
- 1 tablespoon sesame oil
- 1 clove garlic, minced
Instructions
- Bring a pot of water to a boil and cook the rice noodles according to package instructions.
- Drain the noodles and rinse them under cold water, then set aside.
- In a small bowl, whisk together peanut butter, soy sauce, lime juice, honey, sesame oil, and minced garlic until smooth.
- In a large mixing bowl, add the cooked noodles, romaine lettuce, carrots, cucumber, red cabbage, cilantro, and mint.
- Pour the peanut dressing over the salad and toss gently until everything is evenly coated.
- Sprinkle roasted peanuts over the top.
- Serve immediately and enjoy.
Notes
- Taste the dressing before tossing and adjust sweetness or acidity if needed.
- For extra crunch, add peanuts just before serving.
