Ingredients
- Spinach, 10 oz (frozen, thawed and drained well)
- Cheddar Cheese, 2 cups (shredded)
- Cottage Cheese, 1 cup
- All-Purpose Flour, 1/2 cup
- Eggs, 4 large
- Butter, 1/2 cup (melted)
- Onion, 1 small (finely chopped)
- Salt, 1/2 teaspoon
- Black Pepper, 1/4 teaspoon
Instructions
- Preheat oven to 350°F (175°C) and lightly grease a 9×13 inch baking dish.
- In a large mixing bowl, whisk together the 4 large eggs, 1/2 cup melted butter, 1/2 cup all-purpose flour, 1/2 teaspoon salt, and 1/4 teaspoon black pepper until smooth.
- Fold in the finely chopped onion, thoroughly drained 10 oz thawed spinach, 2 cups shredded cheddar cheese, and 1 cup cottage cheese until evenly combined.
- Pour the mixture into the prepared 9×13 baking dish and spread it evenly with a spatula to level the top.
- Bake for 35 to 40 minutes, until the top is golden brown and the center is set when gently shaken.
- Remove from oven and allow to cool slightly for 8 to 10 minutes so the squares set and cut cleanly.
- Cut into 12 even squares and serve warm. Enjoy!
Notes
- Drain spinach very well before adding to prevent a watery final texture.
- Let the baked pan rest for a few minutes before cutting to ensure neat squares.
- Reheat leftovers in a 325°F oven to restore crisp edges rather than microwaving when possible.
- To freeze, wrap cooled squares tightly and freeze up to 2 months, then reheat from frozen in the oven.
