These spinach and cheese puff pastry squares are a quick and elegant appetizer. Flaky golden pastry is filled with a cheesy spinach mixture, making them perfect for parties or holiday gatherings.

- 1 sheet puff pastry, thawed
- 1 cup fresh spinach, chopped
- 1/2 cup ricotta cheese
- 1/2 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 1 clove garlic, minced
- 1 egg, beaten (for egg wash)
- Salt and pepper, to taste
Instructions
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a medium bowl, combine the chopped spinach, ricotta cheese, mozzarella cheese, Parmesan cheese, garlic, salt, and pepper. Mix until fully combined.
- Roll out the puff pastry sheet on a lightly floured surface and cut into 9 equal squares.
- Place a spoonful of the spinach and cheese mixture in the center of each square.
- Fold the corners slightly inward or leave open for a rustic look.
- Brush the edges of the pastry with beaten egg for a golden finish.
- Transfer the squares to the prepared baking sheet and bake for 15-18 minutes, or until puffed and golden brown.
- Serve warm and enjoy.
Notes
- You can use frozen spinach; just thaw and squeeze out excess moisture before using.
- Try adding feta cheese for extra flavor.
- Best served fresh, but they can be reheated in the oven at 350°F (175°C) for 5 minutes.
