Description

These spinach and cheese puff pastry squares are a quick and elegant appetizer. Flaky golden pastry is filled with a cheesy spinach mixture, making them perfect for parties or holiday gatherings.


Ingredients

  • 1 sheet puff pastry, thawed
  • 1 cup fresh spinach, chopped
  • 1/2 cup ricotta cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1 clove garlic, minced
  • 1 egg, beaten (for egg wash)
  • Salt and pepper, to taste

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, combine the chopped spinach, ricotta cheese, mozzarella cheese, Parmesan cheese, garlic, salt, and pepper. Mix until fully combined.
  3. Roll out the puff pastry sheet on a lightly floured surface and cut into 9 equal squares.
  4. Place a spoonful of the spinach and cheese mixture in the center of each square.
  5. Fold the corners slightly inward or leave open for a rustic look.
  6. Brush the edges of the pastry with beaten egg for a golden finish.
  7. Transfer the squares to the prepared baking sheet and bake for 15-18 minutes, or until puffed and golden brown.
  8. Serve warm and enjoy.

Notes

  • You can use frozen spinach; just thaw and squeeze out excess moisture before using.
  • Try adding feta cheese for extra flavor.
  • Best served fresh, but they can be reheated in the oven at 350°F (175°C) for 5 minutes.
