Description

A hearty yet fresh pasta dish featuring flaky salmon, roasted broccoli, and penne tossed with garlic, chili, lemon, and Parmesan for a spicy, zesty kick.


Ingredients

  • 2 salmon fillets (about 6 oz each)
  • 12 oz penne pasta
  • 3 cups broccoli florets
  • 3 tbsp olive oil
  • 3 garlic cloves, minced
  • 1 tsp red pepper flakes
  • Zest and juice of 1 lemon
  • 1/2 cup grated Parmesan cheese
  • Salt and black pepper, to taste
  • 2 tbsp fresh parsley, chopped

Instructions

  1. Preheat oven to 400°F and bring a large pot of salted water to a boil.
  2. Toss broccoli with olive oil, salt, and pepper. Spread on a baking sheet and roast for 20 minutes until crisp at the edges.
  3. Cook penne pasta until al dente. Reserve 1/2 cup pasta water.
  4. Season salmon with salt, pepper, and olive oil. Cook in a skillet over medium heat for 3–4 minutes per side until flaky.
  5. In a large pan, sauté garlic in olive oil, add red pepper flakes, then toss in pasta with a splash of reserved pasta water.
  6. Stir in roasted broccoli, then gently fold in flaked salmon.
  7. Finish with lemon juice, zest, Parmesan, and parsley before serving.

Notes

  • Save some pasta water to help bind the sauce together.
  • Adjust spice level by adding more or fewer red pepper flakes.
  • Use freshly grated Parmesan for best flavor and texture.
