Spicy Jalapeño Chicken Stir-Fry is a quick and fiery dish loaded with tender chicken slices, vibrant vegetables, and spicy jalapeños tossed in a bold, savory sauce. It’s perfect for weeknight dinners when you want something healthy, flavorful, and satisfying.

- 1 lb (450g) boneless, skinless chicken breasts, thinly sliced
- 2 tablespoons soy sauce
- 1 tablespoon cornstarch
- 2 tablespoons vegetable oil
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 2–3 jalapeños, thinly sliced (with or without seeds depending on spice preference)
- 1 red bell pepper, sliced
- 1 cup snap peas or green beans
- 3 green onions, chopped
- 2 tablespoons oyster sauce
- 1 tablespoon hoisin sauce
- 1 tablespoon rice vinegar
- 1 teaspoon sesame oil
- Cooked rice, for serving
Instructions
- In a bowl, toss chicken with soy sauce and cornstarch. Let marinate for 10 minutes.
- Heat 1 tablespoon vegetable oil in a wok or large skillet over high heat. Stir-fry chicken until browned and cooked through, about 5–6 minutes. Transfer to a plate.
- In the same skillet, add remaining oil. Stir-fry garlic, ginger, and jalapeños for 1 minute until fragrant.
- Add bell pepper and snap peas. Stir-fry for 2–3 minutes until crisp-tender.
- Return chicken to the pan. Add oyster sauce, hoisin sauce, rice vinegar, and sesame oil. Toss everything until evenly coated and heated through.
- Sprinkle with chopped green onions and serve immediately over rice.
Notes
- Adjust the number of jalapeños to control the heat level.
- Add cashews or peanuts for crunch.
- For a lower-sodium version, use low-sodium soy sauce and reduce oyster sauce.
