Description

A comforting, flavor-packed bowl featuring spicy ground beef, garlic-sautéed vegetables, and fluffy white rice. Perfect for quick dinners or weekly meal prep.


Ingredients

  • 1 pound lean ground beef
  • 4 garlic cloves, minced
  • 1 medium zucchini, sliced
  • 1 large red or yellow bell pepper, sliced
  • 1 cup sliced mushrooms
  • 1 cup steamed broccoli florets
  • 3 cups cooked white rice
  • 3 tablespoons soy sauce
  • 1 tablespoon sriracha
  • 1 teaspoon sesame oil
  • 2 green onions, chopped
  • 2 tablespoons olive oil

Instructions

  1. Heat a large skillet or wok over medium-high heat.
  2. In a small bowl, mix soy sauce and sriracha. Set aside.
  3. Add 1 tablespoon olive oil to the hot pan and cook ground beef, letting it brown undisturbed for 2 minutes before breaking it up. Cook until fully browned, then set aside.
  4. In the same pan, add another tablespoon of olive oil and stir-fry the zucchini, bell pepper, and mushrooms for 4 to 5 minutes.
  5. Add minced garlic and stir for 30 seconds. Return the beef to the pan and pour in the sauce. Toss to coat and simmer for 2 minutes.
  6. Add steamed broccoli and sesame oil. Stir gently to combine.
  7. Serve the beef and veggie mix over cooked white rice and garnish with green onions.

Notes

  • Use day-old rice for the best texture.
  • Adjust sriracha to control spice level.
  • Add a fried egg on top for extra richness.
