- 1 cup long grain white rice
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (14 oz) diced tomatoes
- 2 cups vegetable broth
- 1 small onion, finely chopped
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon paprika
- 1 teaspoon cumin
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons fresh parsley, chopped
Instructions
- Place a large pot over medium heat and allow it to warm up.
- Add olive oil, then sauté the chopped onion until soft, followed by garlic until fragrant.
- Stir in the rice and toast it lightly for about 1 to 2 minutes.
- Add diced tomatoes, black beans, vegetable broth, paprika, cumin, salt, and black pepper, then stir well.
- Bring to a gentle boil, reduce heat, cover, and let it simmer for 18 to 20 minutes until rice is tender.
- Remove from heat, fluff with a fork, and stir in fresh parsley.
- Serve warm and enjoy.
Notes
- Rinse the rice before cooking to remove excess starch.
- Use warm broth for more even cooking.
