- 1 large avocado
- 2 cups shredded lettuce
- 2 flour tortillas
- 2 eggs
- 1 cup all-purpose flour
- 1 cup buttermilk
- 2 cups cooking oil
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon salt
- 1 teaspoon black pepper
Instructions
- Heat oil in a deep skillet over medium heat until ready for frying.
- In one bowl, mix flour with paprika, garlic powder, onion powder, salt, and black pepper. In another bowl, whisk eggs and buttermilk together.
- Dip chicken into the buttermilk mixture, then coat thoroughly in the seasoned flour.
- Fry the coated chicken pieces until golden and fully cooked, then set aside.
- Cook the rice according to package instructions and prepare all toppings.
- Slice the fried chicken into bite-sized pieces and lightly toast the tortillas, then cut them into strips.
- Assemble the bowl by layering rice, beans, corn, lettuce, tomatoes, avocado, and top with crispy chicken and tortilla strips.
Notes
- Marinate chicken in buttermilk for at least 1 hour for extra tenderness.
