- 1 lb ground beef (80/20 blend)
- Salt and black pepper to taste
- 4 slices American cheese
- 4 hamburger buns
- 1/2 cup sliced dill pickles
- 1/2 cup shredded lettuce
- 1/2 small onion, finely chopped
- 2 tablespoons mustard
- 2 tablespoons mayonnaise
- 1 tablespoon ketchup
- 1 tablespoon pickle juice (optional, for sauce)
- 1 tablespoon vegetable oil or butter (for buns)
Instructions
- Divide the ground beef into 8 equal balls. Do not overwork the meat. Season each with salt and pepper.
- Heat a cast iron skillet or griddle over medium-high heat. Once hot, place the beef balls on the surface and smash them flat using a spatula or burger press.
- Cook the patties for about 2-3 minutes on the first side until the edges are crispy and browned. Flip and immediately top 4 of the patties with a slice of cheese. Cook for another 1-2 minutes.
- Stack a plain patty on top of a cheese-topped patty to create 4 double-stacked burgers.
- Meanwhile, toast the burger buns in a skillet with a little oil or butter until golden.
- In a small bowl, mix mustard, mayonnaise, ketchup, and pickle juice to make the sauce.
- To assemble: Spread sauce on both the top and bottom buns. Layer with shredded lettuce, chopped onion, pickles, and the double-stacked burger patties. Close with the top bun.
- Serve immediately with fries or your favorite sides.
