Description

Comforting, creamy, and full of flavor, this Smothered Chicken and Rice Delight features tender chicken thighs simmered in a rich gravy and served over fluffy white rice. It’s a soul-warming dish perfect for any night of the week.


Ingredients

  • 6 bone-in, skin-on chicken thighs
  • 2 cups white rice
  • 1 large yellow onion, thinly sliced
  • 4 garlic cloves, minced
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 3 tablespoons all-purpose flour
  • 3 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika

Instructions

  1. Heat olive oil in a large skillet or Dutch oven over medium heat.
  2. Season chicken with salt, pepper, and paprika. Sear skin-side down until golden, about 5 minutes per side. Remove and set aside.
  3. In the same skillet, melt butter and sauté onions and garlic until golden, about 3–4 minutes.
  4. Whisk in flour to form a roux, then slowly add chicken broth and heavy cream, whisking until smooth.
  5. Return chicken to the pan, cover, and simmer over low heat for 30–35 minutes until chicken is cooked through and tender.
  6. Meanwhile, cook rice according to package directions.
  7. Stir in chopped parsley just before serving.
  8. Serve chicken and gravy over rice, spooning sauce generously over the top.

Notes

  • Use bone-in thighs for the juiciest results.
  • Let the sauce simmer uncovered briefly if you prefer a thicker gravy.
  • Adjust salt and pepper to taste after simmering.
  • Store leftovers in an airtight container for up to 3 days.
