- 6 bone-in, skin-on chicken thighs
- 2 cups white rice
- 1 large yellow onion, thinly sliced
- 4 garlic cloves, minced
- 2 cups chicken broth
- 1 cup heavy cream
- 3 tablespoons all-purpose flour
- 3 tablespoons unsalted butter
- 2 tablespoons olive oil
- 2 tablespoons fresh parsley, chopped
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika
Instructions
- Heat olive oil in a large skillet or Dutch oven over medium heat.
- Season chicken with salt, pepper, and paprika. Sear skin-side down until golden, about 5 minutes per side. Remove and set aside.
- In the same skillet, melt butter and sauté onions and garlic until golden, about 3–4 minutes.
- Whisk in flour to form a roux, then slowly add chicken broth and heavy cream, whisking until smooth.
- Return chicken to the pan, cover, and simmer over low heat for 30–35 minutes until chicken is cooked through and tender.
- Meanwhile, cook rice according to package directions.
- Stir in chopped parsley just before serving.
- Serve chicken and gravy over rice, spooning sauce generously over the top.
Notes
- Use bone-in thighs for the juiciest results.
- Let the sauce simmer uncovered briefly if you prefer a thicker gravy.
- Adjust salt and pepper to taste after simmering.
