- 2 smoked sausages, cooked
- 2 sandwich rolls or hoagie buns
- 1/4 cup chimichurri sauce (homemade or store-bought)
- 1 small red onion, thinly sliced
- 1/4 cup fresh cilantro, chopped
- 1 tablespoon olive oil
- 1 tablespoon red wine vinegar
- 1 teaspoon garlic powder
- Salt and pepper to taste
Instructions
- Heat the smoked sausages on a grill or in a pan until warmed through, about 5-7 minutes.
- Slice the sausages into halves or thirds, depending on your preference, and set aside.
- For the chimichurri sauce, mix olive oil, red wine vinegar, garlic powder, chopped cilantro, and salt and pepper to taste. Stir well to combine.
- Toast the sandwich rolls or buns lightly on the grill or in the oven.
- Assemble the sandwiches by placing the sliced sausages in the rolls, topping with a generous amount of chimichurri sauce, and adding the thinly sliced red onion.
