Light, elegant, and full of flavor, these smoked salmon cucumber rolls are the perfect no-cook appetizer or snack. Fresh cucumber ribbons wrapped around creamy, herby cream cheese and silky smoked salmon make each bite irresistible.
Ingredients

- 2 large cucumbers, thinly sliced lengthwise
- 8 ounces smoked salmon, sliced
- 6 ounces cream cheese, softened
- 2 tablespoons fresh dill, finely chopped
- 1 teaspoon lemon juice
- 2 tablespoons capers, drained and chopped
- Salt and pepper, to taste
Instructions
- In a small bowl, mix cream cheese, lemon juice, dill, and capers until smooth. Season with salt and pepper to taste.
- Lay cucumber slices flat on a cutting board and pat dry with paper towels.
- Spread a thin layer of the cream cheese mixture onto each cucumber slice.
- Place a piece of smoked salmon on top of the cream cheese.
- Roll each cucumber slice tightly into a spiral.
- Chill the rolls for 10 minutes to set, then garnish with extra dill or sesame seeds if desired.
- Serve chilled and enjoy.
Notes
- Use a mandoline for even cucumber slices.
- Don’t overfill the rolls to keep them neat.
- Store in an airtight container lined with paper towels for up to 24 hours.
