Tender, juicy chicken thighs slow-cooked in a sticky sweet chili sauce, finished with sesame seeds and green onions. A comforting, flavor-packed dish that’s effortless to make.

- 2 pounds boneless skinless chicken thighs
- 1 cup sweet chili sauce
- 2 tablespoons soy sauce
- 2 tablespoons brown sugar
- 3 cloves garlic, minced
- 1 tablespoon cornstarch
- 2 stalks green onions, chopped
- 1 tablespoon sesame seeds
Instructions
- In a mixing bowl, whisk together sweet chili sauce, soy sauce, brown sugar, and minced garlic until combined.
- Place chicken thighs in the bottom of the slow cooker and pour sauce over them, coating evenly.
- Cover and cook on low for 5 to 6 hours or on high for 3 to 4 hours, until chicken is tender and fully cooked.
- In the last 15 minutes of cooking, stir together cornstarch and a splash of cold water to make a slurry. Stir into the slow cooker and cook uncovered until sauce thickens.
- Garnish with chopped green onions and sesame seeds before serving.
Notes
- For extra heat, add a teaspoon of crushed red pepper flakes.
- To avoid overcooking, use the low setting if possible.
- Serve with jasmine rice, noodles, or in lettuce wraps.
- Leftovers are great for tacos, rice bowls, or stir-fry.
