Description

Tender, juicy chicken thighs slow-cooked in a sticky sweet chili sauce, finished with sesame seeds and green onions. A comforting, flavor-packed dish that’s effortless to make.


Ingredients

  • 2 pounds boneless skinless chicken thighs
  • 1 cup sweet chili sauce
  • 2 tablespoons soy sauce
  • 2 tablespoons brown sugar
  • 3 cloves garlic, minced
  • 1 tablespoon cornstarch
  • 2 stalks green onions, chopped
  • 1 tablespoon sesame seeds

Instructions

  1. In a mixing bowl, whisk together sweet chili sauce, soy sauce, brown sugar, and minced garlic until combined.
  2. Place chicken thighs in the bottom of the slow cooker and pour sauce over them, coating evenly.
  3. Cover and cook on low for 5 to 6 hours or on high for 3 to 4 hours, until chicken is tender and fully cooked.
  4. In the last 15 minutes of cooking, stir together cornstarch and a splash of cold water to make a slurry. Stir into the slow cooker and cook uncovered until sauce thickens.
  5. Garnish with chopped green onions and sesame seeds before serving.

Notes

  • For extra heat, add a teaspoon of crushed red pepper flakes.
  • To avoid overcooking, use the low setting if possible.
  • Serve with jasmine rice, noodles, or in lettuce wraps.
  • Leftovers are great for tacos, rice bowls, or stir-fry.
