Description

Instructions

  1. Grease and line the base and sides of the slow cooker insert with baking paper. Set aside.
  2. In a large mixing bowl, whisk together self-raising flour, sugar, baking powder, and salt.
  3. Add the softened butter, eggs, milk, and vanilla extract to the dry ingredients. Use an electric mixer or whisk to beat the mixture until smooth and combined.
  4. Pour the batter into the prepared slow cooker insert, spreading it evenly.
  5. To make the golden syrup sauce, combine golden syrup, water, butter, sugar, and vanilla extract in a saucepan. Heat over medium heat, stirring until the butter melts and the sugar dissolves, then bring to a simmer for 2-3 minutes until the sauce thickens slightly.
  6. Pour the warm golden syrup sauce evenly over the sponge batter in the slow cooker.
  7. Cover the slow cooker with its lid and cook on low for 2 to 2 1/2 hours, or until the sponge is fully cooked and the sauce is bubbling around the edges. The cake will rise above the sauce during cooking.
  8. Once done, turn off the slow cooker and allow the sponge to cool slightly before serving.
