Description

A comforting and flavorful slow cooker meal with tender shredded chicken, rice, beans, and warm spices, all cooked together for an easy, satisfying bowl.


Ingredients

  • 1.5 pounds chicken thighs
  • 1 cup long grain white rice
  • 1 can black beans, drained and rinsed
  • 1 cup corn
  • 1 can diced tomatoes
  • 2 cups chicken broth
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 whole lime
  • 0.25 cup fresh cilantro, chopped

Instructions

  1. Turn the slow cooker on low heat to preheat.
  2. Mix chili powder, cumin, paprika, salt, and black pepper, then coat the chicken evenly.
  3. Add olive oil, chopped onion, and minced garlic to the slow cooker.
  4. Add rice, black beans, corn, diced tomatoes, and chicken broth, then place the chicken on top.
  5. Cover and cook on low for 6 to 7 hours until the chicken is tender.
  6. Shred the chicken with forks and mix everything together, then squeeze fresh lime juice over the dish.
  7. Top with chopped cilantro and serve warm.
