- 1.5 pounds chicken thighs
- 1 cup long grain white rice
- 1 can black beans, drained and rinsed
- 1 cup corn
- 1 can diced tomatoes
- 2 cups chicken broth
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1 tablespoon olive oil
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1 teaspoon salt
- 0.5 teaspoon black pepper
- 1 whole lime
- 0.25 cup fresh cilantro, chopped
Instructions
- Turn the slow cooker on low heat to preheat.
- Mix chili powder, cumin, paprika, salt, and black pepper, then coat the chicken evenly.
- Add olive oil, chopped onion, and minced garlic to the slow cooker.
- Add rice, black beans, corn, diced tomatoes, and chicken broth, then place the chicken on top.
- Cover and cook on low for 6 to 7 hours until the chicken is tender.
- Shred the chicken with forks and mix everything together, then squeeze fresh lime juice over the dish.
- Top with chopped cilantro and serve warm.
Notes
