- 1 lb beef stew meat, cubed
- 2 tablespoons olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 2 cups diced tomatoes (fresh or canned)
- 1 cup beef broth
- 2 large carrots, peeled and sliced
- 1 cup green beans, trimmed
- 1 medium zucchini, diced
- 1 tablespoon tomato paste
- 1 teaspoon dried thyme
- 1 teaspoon dried basil
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- In a large skillet, heat olive oil over medium-high heat. Brown the beef stew meat on all sides, about 5–7 minutes.
- Transfer the browned beef to the slow cooker and add the onion, garlic, diced tomatoes, beef broth, carrots, green beans, zucchini, tomato paste, thyme, basil, salt, and pepper.
- Stir everything together, cover the slow cooker, and cook on low for 6–8 hours or until the beef is tender and the vegetables are cooked through.
- Garnish with fresh parsley before serving.
Notes
- For extra flavor, sear the beef in batches to avoid overcrowding the skillet.
- If you prefer a thicker sauce, you can add a cornstarch slurry (1 tablespoon cornstarch mixed with 1 tablespoon water) in the last 30 minutes of cooking.
