Description

Slow-Cooked Garlic Butter Chicken & Ribeye with Creamy Parmesan Mash is a luxurious, hearty meal combining tender garlic-butter infused chicken thighs, juicy ribeye steak, and velvety mashed potatoes with parmesan. A perfect indulgent dinner for special occasions or cozy weekends.

  • For the Garlic Butter Chicken:
  • 4 boneless, skinless chicken thighs
  • 4 cloves garlic, minced
  • 1/4 cup unsalted butter, melted
  • 1 tbsp olive oil
  • 1 tsp dried thyme
  • 1 tsp paprika
  • Salt and pepper to taste
  • For the Ribeye:
  • 2 ribeye steaks (about 10 oz each)
  • 1 tbsp olive oil
  • 2 tbsp butter
  • 2 cloves garlic, smashed
  • Fresh rosemary or thyme sprigs
  • Salt and pepper
  • For the Creamy Parmesan Mash:
  • 2 lbs potatoes, peeled and cubed
  • 4 tbsp butter
  • 1/2 cup heavy cream (warm)
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. Prepare the chicken: In a bowl, mix melted butter, garlic, olive oil, thyme, paprika, salt, and pepper. Place chicken in a slow cooker and pour the mixture over it. Cook on low for 4–5 hours or until tender.
  2. Prepare the ribeye: Season steaks with salt and pepper. Heat olive oil in a hot skillet over medium-high heat. Sear steaks for 2–3 minutes per side. Add butter, smashed garlic, and herbs; baste for another 1–2 minutes. Rest before slicing.
  3. Prepare the mash: Boil potatoes in salted water until fork-tender. Drain and mash with butter, warm cream, and Parmesan until smooth. Season to taste.
  4. To serve: Plate creamy mash, top with slow-cooked chicken and sliced ribeye. Spoon over garlic butter from the cooker or skillet. Garnish with fresh herbs if desired.

Notes

  • Use Yukon Gold potatoes for extra creamy mash.
  • Adjust garlic to preference – roasted garlic can be used for a sweeter flavor.
  • Rest steaks before slicing to retain juices.
  • Substitute chicken breasts if preferred, but monitor doneness to avoid drying out.
