Description

A refreshing and light summer salad combining juicy watermelon, crisp cucumber, creamy feta, and fresh mint — perfect for picnics, barbecues, or a healthy snack.

Ingredients

Scale
  • 4 cups seedless watermelon, cubed
  • 1 1/2 cups cucumber, sliced and halved
  • 3/4 cup feta cheese, crumbled
  • 1/4 cup fresh mint leaves, chopped
  • 2 tbsp olive oil
  • 1 tbsp lime juice (or lemon juice)
  • Salt and black pepper to taste

Instructions

  1. In a large mixing bowl, combine the watermelon cubes, cucumber slices, and crumbled feta cheese.
  2. Sprinkle chopped fresh mint over the top.
  3. In a small bowl, whisk together the olive oil, lime juice, salt, and pepper.
  4. Pour the dressing over the salad and gently toss to combine.
  5. Serve immediately or chill for 10–15 minutes before serving for extra freshness.

Notes

  • For best flavor, use ripe watermelon and English cucumber or Persian cucumber.
  • Optional add-ins: red onion, arugula, or a drizzle of balsamic glaze.
  • Serve cold for a refreshing summer side or appetizer.
