Ingredients

- 1 1/2 cups cucumber, sliced and halved
- 3/4 cup feta cheese, crumbled
- 1/4 cup fresh mint leaves, chopped
- 2 tbsp olive oil
- 1 tbsp lime juice (or lemon juice)
- Salt and black pepper to taste
Instructions
- In a large mixing bowl, combine the watermelon cubes, cucumber slices, and crumbled feta cheese.
- Sprinkle chopped fresh mint over the top.
- In a small bowl, whisk together the olive oil, lime juice, salt, and pepper.
- Pour the dressing over the salad and gently toss to combine.
- Serve immediately or chill for 10–15 minutes before serving for extra freshness.
Notes
- For best flavor, use ripe watermelon and English cucumber or Persian cucumber.
