Description

A smooth and silky mango pudding made with ripe mango puree, gently sweetened and set to perfection. This chilled tropical dessert is light, refreshing, and bursting with natural mango flavor.


Ingredients

  • 2 cups mango puree (about 3 large ripe mangoes, blended smooth)
  • 2 1/2 teaspoons unflavored gelatin powder (about 7 grams)
  • 1/4 cup warm water
  • 1/4 cup granulated sugar (50 grams)
  • 1 tablespoon fresh lemon juice

Instructions

  1. Sprinkle the gelatin over the warm water in a small bowl. Let it bloom for 5 minutes, then stir until fully dissolved.
  2. In a mixing bowl, combine the mango puree, granulated sugar, and fresh lemon juice. Stir until the sugar is completely dissolved.
  3. If needed, gently warm the gelatin mixture in a small saucepan over low heat until fully liquid, do not boil.
  4. Slowly pour the dissolved gelatin into the mango mixture while stirring continuously to ensure even distribution.
  5. Pour the mixture evenly into serving glasses or bowls and gently tap to remove air bubbles.
  6. Let cool slightly at room temperature, then refrigerate for at least 3 hours or until fully set.
  7. Serve chilled, optionally topped with fresh mango cubes.

Notes

  • Use fully ripe mangoes for the best natural sweetness and flavor.
  • For an extra smooth texture, strain the mango mixture before pouring into cups.
  • If using agar agar instead of gelatin, follow package instructions for proper setting ratios.
