Description

A quick and healthy shrimp and zucchini stir fry tossed in a homemade teriyaki sauce, creating a savory and light meal full of flavor and vibrant colors.


Ingredients

  • 1 lb shrimp, peeled and deveined
  • 2 medium zucchinis, sliced into half-moons
  • 1 tablespoon olive oil or sesame oil
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1/4 cup low-sodium soy sauce
  • 2 tablespoons honey or maple syrup
  • 1 tablespoon rice vinegar
  • 1 tablespoon cornstarch (optional, for thicker sauce)
  • 1/4 teaspoon red pepper flakes (optional, for heat)
  • 1 tablespoon sesame seeds (optional, for garnish)
  • 2 green onions, sliced (optional, for garnish)

Instructions

  1. In a small bowl, whisk together the soy sauce, honey, rice vinegar, and cornstarch (if using). Set aside.
  2. Heat olive oil or sesame oil in a large skillet or wok over medium-high heat. Add the garlic and ginger and sauté for about 1 minute until fragrant.
  3. Add the shrimp to the skillet and cook for 2-3 minutes per side, or until pink and cooked through. Remove shrimp from the skillet and set aside.
  4. In the same skillet, add the zucchini slices and cook for about 3-4 minutes, stirring occasionally, until tender but still slightly crisp.
  5. Return the shrimp to the skillet. Pour the homemade teriyaki sauce over the shrimp and zucchini. Stir to combine and cook for another 2 minutes, until the sauce thickens and everything is evenly coated.
  6. Serve the stir fry garnished with sesame seeds and green onions, if desired. Serve hot with rice or noodles.

Notes

  • If you like a sweeter sauce, increase the honey or maple syrup to taste.
  • Feel free to add other vegetables such as bell peppers, carrots, or snap peas for extra crunch and flavor.
  • To make the sauce spicier, add more red pepper flakes or a dash of hot sauce.
