- 1 lb shrimp, peeled and deveined
- 2 medium zucchinis, sliced into half-moons
- 1 tablespoon olive oil or sesame oil
- 2 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 1/4 cup low-sodium soy sauce
- 2 tablespoons honey or maple syrup
- 1 tablespoon rice vinegar
- 1 tablespoon cornstarch (optional, for thicker sauce)
- 1/4 teaspoon red pepper flakes (optional, for heat)
- 1 tablespoon sesame seeds (optional, for garnish)
- 2 green onions, sliced (optional, for garnish)
Instructions
- In a small bowl, whisk together the soy sauce, honey, rice vinegar, and cornstarch (if using). Set aside.
- Heat olive oil or sesame oil in a large skillet or wok over medium-high heat. Add the garlic and ginger and sauté for about 1 minute until fragrant.
- Add the shrimp to the skillet and cook for 2-3 minutes per side, or until pink and cooked through. Remove shrimp from the skillet and set aside.
- In the same skillet, add the zucchini slices and cook for about 3-4 minutes, stirring occasionally, until tender but still slightly crisp.
- Return the shrimp to the skillet. Pour the homemade teriyaki sauce over the shrimp and zucchini. Stir to combine and cook for another 2 minutes, until the sauce thickens and everything is evenly coated.
- Serve the stir fry garnished with sesame seeds and green onions, if desired. Serve hot with rice or noodles.
Notes
- If you like a sweeter sauce, increase the honey or maple syrup to taste.
- Feel free to add other vegetables such as bell peppers, carrots, or snap peas for extra crunch and flavor.
- To make the sauce spicier, add more red pepper flakes or a dash of hot sauce.
