Description

A cozy, crowd-pleasing Shrimp and Spinach Quiche with a golden buttery crust, tender shrimp, silky egg custard, and vibrant spinach, perfect for brunch, lunch, or an easy make-ahead dinner.

  • 1 unbaked 9-inch pie crust
  • 1 cup medium shrimp, peeled, deveined, chopped
  • 2 cups fresh spinach, roughly chopped
  • 4 large eggs
  • 1 cup whole milk
  • 1 cup shredded Gruyère or mozzarella
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1/2 teaspoon fine sea salt, plus more to taste
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat the oven to 375°F (190°C). Set a baking sheet on the middle rack to preheat.
  2. In a medium bowl, whisk the eggs, milk, salt, and pepper until smooth and well combined. Set aside.
  3. Heat the olive oil in a skillet over medium heat. Add the garlic and cook for 30 seconds until fragrant. Stir in the shrimp and cook 1 to 2 minutes until just pink. Add the spinach and cook 1 to 2 minutes until wilted. Remove from heat.
  4. Fit the pie crust into a 9-inch pie dish and prick the base with a fork.
  5. Spread the shrimp and spinach mixture evenly in the crust. Sprinkle the shredded cheese over the top. Pour the egg mixture evenly over the filling.
  6. Place the pie dish on the preheated baking sheet and bake for 35 to 40 minutes, until the top is golden and the center has a slight jiggle.
  7. Cool for 10 minutes to set, then slice and serve warm or at room temperature.

Notes

  • Cook spinach before adding to avoid excess moisture in the filling.
  • Season in layers for deeper flavor, lightly salt the shrimp and spinach in the pan.
  • For extra richness, replace up to half of the milk with half-and-half.
  • For a crispier base, blind-bake the crust for 10 minutes before filling.
