- 1 unbaked 9-inch pie crust
- 1 cup medium shrimp, peeled, deveined, chopped
- 2 cups fresh spinach, roughly chopped
- 4 large eggs
- 1 cup whole milk
- 1 cup shredded Gruyère or mozzarella
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1/2 teaspoon fine sea salt, plus more to taste
- 1/4 teaspoon black pepper
Instructions
- Preheat the oven to 375°F (190°C). Set a baking sheet on the middle rack to preheat.
- In a medium bowl, whisk the eggs, milk, salt, and pepper until smooth and well combined. Set aside.
- Heat the olive oil in a skillet over medium heat. Add the garlic and cook for 30 seconds until fragrant. Stir in the shrimp and cook 1 to 2 minutes until just pink. Add the spinach and cook 1 to 2 minutes until wilted. Remove from heat.
- Fit the pie crust into a 9-inch pie dish and prick the base with a fork.
- Spread the shrimp and spinach mixture evenly in the crust. Sprinkle the shredded cheese over the top. Pour the egg mixture evenly over the filling.
- Place the pie dish on the preheated baking sheet and bake for 35 to 40 minutes, until the top is golden and the center has a slight jiggle.
- Cool for 10 minutes to set, then slice and serve warm or at room temperature.
Notes
- Cook spinach before adding to avoid excess moisture in the filling.
- Season in layers for deeper flavor, lightly salt the shrimp and spinach in the pan.
- For extra richness, replace up to half of the milk with half-and-half.
- For a crispier base, blind-bake the crust for 10 minutes before filling.
