An easy and comforting sheet pan dinner featuring flaky, buttery salmon paired with crispy dill baby potatoes, all roasted together for a stress-free, flavorful meal.

- 4 salmon fillets (about 6 oz each)
- 1.5 pounds baby potatoes, halved
- 3 tablespoons fresh dill, chopped
- 3 garlic cloves, minced
- 3 tablespoons olive oil
- 1 lemon, sliced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons butter, melted
Instructions
- Preheat oven to 400°F (200°C) and line a sheet pan with parchment paper.
- In a mixing bowl, toss baby potatoes with olive oil, minced garlic, salt, pepper, and half of the chopped dill.
- Spread potatoes on one half of the sheet pan, cut side down.
- Place salmon fillets on the other half. Brush with melted butter, sprinkle with remaining dill, and top with lemon slices.
- Roast for 20–25 minutes until salmon flakes easily and potatoes are golden. Broil for 2–3 minutes if desired for extra crispiness.
- Remove lemon slices, squeeze fresh lemon juice over salmon, and sprinkle with extra dill.
- Serve hot with your favorite sides or salad.

- Let salmon come to room temperature for even cooking.
- Use a thermometer to check salmon doneness (125–130°F internal temp).
- Dry the salmon with paper towels to avoid steaming instead of roasting.
