- 500 grams ground beef
- 1 cup corn kernels
- 1/2 cup breadcrumbs
- 1 large egg
- 3 garlic cloves, minced
- 1/3 cup mayonnaise
- 1 whole lime, juiced
- 1 teaspoon chili powder
- 1 teaspoon paprika
- 1/2 cup grated cheese
- 2 medium zucchini, sliced
- 2 large bell peppers, chopped
- 1 large red onion, sliced
- 2 tablespoons olive oil
Instructions
- Preheat oven to 200°C and line a large sheet pan with parchment paper.
- In a bowl, combine ground beef, breadcrumbs, egg, garlic, half of the corn, chili powder, paprika, and a pinch of salt. Mix until well combined.
- Lightly grease the sheet pan with olive oil.
- Shape the mixture into evenly sized meatballs and place them on one side of the pan.
- Toss zucchini, bell peppers, and red onion with olive oil, then spread them on the other side of the pan.
- Roast for 20 to 25 minutes until meatballs are fully cooked and vegetables are tender with slight charring.
- In a small bowl, mix mayonnaise, lime juice, remaining corn, and grated cheese.
- Spoon the creamy mixture over the hot meatballs.
- Serve immediately and enjoy.
