Description

Juicy meatballs infused with bold, creamy elote-inspired flavors, roasted alongside vibrant vegetables on a single sheet pan for an easy and satisfying meal.


Ingredients

  • 500 grams ground beef
  • 1 cup corn kernels
  • 1/2 cup breadcrumbs
  • 1 large egg
  • 3 garlic cloves, minced
  • 1/3 cup mayonnaise
  • 1 whole lime, juiced
  • 1 teaspoon chili powder
  • 1 teaspoon paprika
  • 1/2 cup grated cheese
  • 2 medium zucchini, sliced
  • 2 large bell peppers, chopped
  • 1 large red onion, sliced
  • 2 tablespoons olive oil

Instructions

  1. Preheat oven to 200°C and line a large sheet pan with parchment paper.
  2. In a bowl, combine ground beef, breadcrumbs, egg, garlic, half of the corn, chili powder, paprika, and a pinch of salt. Mix until well combined.
  3. Lightly grease the sheet pan with olive oil.
  4. Shape the mixture into evenly sized meatballs and place them on one side of the pan.
  5. Toss zucchini, bell peppers, and red onion with olive oil, then spread them on the other side of the pan.
  6. Roast for 20 to 25 minutes until meatballs are fully cooked and vegetables are tender with slight charring.
  7. In a small bowl, mix mayonnaise, lime juice, remaining corn, and grated cheese.
  8. Spoon the creamy mixture over the hot meatballs.
  9. Serve immediately and enjoy.
