Savoury Herb Roasted Chicken and Crispy Potato Medley is a classic, flavorful dish featuring juicy roasted chicken seasoned with aromatic herbs alongside a medley of golden, crispy potatoes. Perfect for a comforting family meal.

- 1 whole chicken (about 4 lbs), patted dry
- 4 tbsp olive oil, divided
- 1 tbsp fresh rosemary, chopped
- 1 tbsp fresh thyme, chopped
- 4 cloves garlic, minced
- Salt and black pepper, to taste
- 1 lb baby potatoes, halved
- 1 lb Yukon gold potatoes, cut into chunks
- 1 tsp paprika
- 1 lemon, halved
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat oven to 425°F (220°C).
- In a small bowl, combine 2 tbsp olive oil, rosemary, thyme, garlic, salt, and pepper.
- Rub the herb mixture all over the chicken, inside the cavity and under the skin if possible. Place lemon halves inside the cavity.
- In a large bowl, toss potatoes with remaining 2 tbsp olive oil, paprika, salt, and pepper.
- Arrange potatoes around the chicken in a roasting pan or baking dish.
- Roast in the oven for 1 hour to 1 hour 15 minutes, until the chicken is cooked through (internal temperature 165°F / 74°C) and potatoes are golden and crispy.
- Let chicken rest for 10 minutes before carving.
- Garnish with fresh parsley and serve hot with the crispy potatoes.
Notes
- Use a meat thermometer to ensure the chicken is perfectly cooked.
- For extra crispy potatoes, parboil them for 5 minutes before roasting.
- Add other root vegetables like carrots or parsnips for variety.
- Save leftover chicken for sandwiches or salads.
