Description

Savoury Herb Roasted Chicken and Crispy Potato Medley is a classic, flavorful dish featuring juicy roasted chicken seasoned with aromatic herbs alongside a medley of golden, crispy potatoes. Perfect for a comforting family meal.


Ingredients

  • 1 whole chicken (about 4 lbs), patted dry
  • 4 tbsp olive oil, divided
  • 1 tbsp fresh rosemary, chopped
  • 1 tbsp fresh thyme, chopped
  • 4 cloves garlic, minced
  • Salt and black pepper, to taste
  • 1 lb baby potatoes, halved
  • 1 lb Yukon gold potatoes, cut into chunks
  • 1 tsp paprika
  • 1 lemon, halved
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat oven to 425°F (220°C).
  2. In a small bowl, combine 2 tbsp olive oil, rosemary, thyme, garlic, salt, and pepper.
  3. Rub the herb mixture all over the chicken, inside the cavity and under the skin if possible. Place lemon halves inside the cavity.
  4. In a large bowl, toss potatoes with remaining 2 tbsp olive oil, paprika, salt, and pepper.
  5. Arrange potatoes around the chicken in a roasting pan or baking dish.
  6. Roast in the oven for 1 hour to 1 hour 15 minutes, until the chicken is cooked through (internal temperature 165°F / 74°C) and potatoes are golden and crispy.
  7. Let chicken rest for 10 minutes before carving.
  8. Garnish with fresh parsley and serve hot with the crispy potatoes.

Notes

  • Use a meat thermometer to ensure the chicken is perfectly cooked.
  • For extra crispy potatoes, parboil them for 5 minutes before roasting.
  • Add other root vegetables like carrots or parsnips for variety.
  • Save leftover chicken for sandwiches or salads.
